Founder & Industry Leader: Born in Manhattan and a graduate of Cornell’s School of Hotel Administration, Oliver Wharton founded A Perfect Bite, Inc. in 2002. He’s consulted for top hospitality groups including MGM Resorts, Marriott, and The Light Group, and collaborated with chefs like Michael Mina and José Andrés.

• Award-Winning Partnerships: In 2014, partnered with Top Chef Master Chris Cosentino to launch celebrated restaurants such as Cockscomb (San Francisco), Acacia House (Napa Valley), Jackrabbit (Portland), and Rosalie (Houston).

• Shaping Vegas Dining: At The Cosmopolitan, Wharton helped launch standout venues like Momofuku, Milk Bar, Zuma, Eggslut, and his own Tekka Bar. He later opened Proper Eats Food Hall at ARIA, bringing in global brands like Seoul Bird, Pizzaoki, and Wexler’s Deli.

• Ongoing Innovation: In partnership with Chef Ray Garcia, Wharton developed VIVA at Resorts World (now expanding to Miami), revived BS Taqueria, opened the English-inspired Luckley Tavern, and launched Nomikai at The Venetian—a dual-concept handroll bar and sushi speakeasy—cementing his role as a visionary in immersive dining.

Entrepreneur & Executive: Jean-Paul Kyrillos is a seasoned leader in the food world, with experience as both a startup founder and corporate executive.

• Farmshelf Co-Founder/CEO: Led the creation of Farmshelf, a smart indoor gardening company that partnered with major food service and hospitality brands like Marriott, Hilton, José Andrés Group, and Compass Group.

• Publishing Leadership: Served as VP/Publisher of Travel + Leisure, overseeing six global editions of the world’s leading travel magazine under American Express Publishing.

• Food & Wine Legacy: As Publisher of Food & Wine, he helped launch the brand’s iconic partnership with Top Chef and led the 25th anniversary of the Food & Wine Classic in Aspen.

Alex Resnick

Education & Early Career: Los Angeles native with degrees from The Culinary Institute of America and Cornell’s School of Hotel Administration; began his career at acclaimed restaurants like Red Medicine and The Bazaar.

• Entrepreneurship: Launched his own fast-casual concept, Picnic LA, and consulted for various L.A. brands.

• Leadership Roles: Served as Director of Food & Beverage at ARRIVE Palm Springs and Phoenix, creating multiple new concepts for both properties.

• Current Role: As Director of Culinary at A Perfect Bite, he’s collaborated with chefs like Chris Cosentino and Ray Garcia, helping to open venues across the U.S.

Chief Operating Officer

Peter Carrillo

Midwest to Vegas: Born in Indiana, Carrillo lived in Chicago and Southern California before settling in Las Vegas 22 years ago. He joined the Marine Corps at 17 and later studied electrical engineering at UNLV while working at Mandalay Bay’s China Grill, sparking his passion for hospitality.

• Climbing the Ranks: Gained hands-on experience at top Las Vegas and LA restaurants, including FIX, Michael Mina, Yellowtail, and SBE’s XIV, often commuting weekly between cities to build his resume.

• Early Leadership: Became a floor manager at 25, later opening Jaleo and China Poblano with Chef José Andrés. Took on his first GM role at Hyde Bellagio, followed by leading positions at Double Barrel and Cleo, while also serving as a casino beverage GM.

• A Perfect Bite: In 2016, joined Oliver Wharton’s team to help develop new concepts and oversee operations, expansion, and management of various venues across the hospitality and F&B space.

Nick Fischella

Early Start & Bellagio Tenure: Began working in restaurants at 14 in Boulder City, then spent 19 years at Bellagio under chefs like Todd English, Michael Mina, and Akira Back, honing his hospitality skills.

• Global Experience: Served as a corporate trainer for the Light Group, helping open high-profile restaurants in Los Angeles, Miami, and Dubai, before becoming Food & Beverage Director for the luxury Boeing 777 charter Crystal Skye.

• Entrepreneur & Educator: Co-founded Banger Brewing, home of the popular El Heffe hefeweizen, and later became a state-certified hospitality instructor, teaching at the Restaurant Hospitality Institute.
